The Proofer room is enclosed by sandwich insulating panels.
An air handling unit(AHU) is provided to maintain the thermal
and hygrometric conditions required.
The conditioning unit (hot/cold/steam) for the setting of the
thermal-hygrometric conditions inside the proofing cell
consists of an air treatment unit complete with controlling
system.
The pan with dough will flow for a certain amount of time after
being placed on a tray in a proofer room.
The number of pans that must be handled in an hour determines
the number of the tray. The tray g'ty will
determine the room size. |
